Meshify C - Are 2 120mm fans OK for intake?

Yup, that will do nicely in your case. And good choice of fans btw.

Need to replace my front fan due to bearing noise, will replacing the stock 120mm fan with two 120mm fans be good?

2 is, in fact, better than 1.

Why do you ask?

So If I use the stock 120mm exhaust and 2 arctic fans, this will be a nice setup? I don't want to use arctic fans as exhaust because the screws are grey.

Meshify C owner here - Gamers Nexus in their case review found that having 2x120mm as front intakes had a significant impact on GPU thermals compared to the stock single fan orientated toward the CPU only. I can completely confirm this in my experience too.
