Is there a way to add a name to a phone number but not have it show up in contacts? I want to know how is calling me for repeat numbers but I don't want it cluttering up my contacts.

Maybe add a secondary account and put the numbers under that contact list. And just exclude that account from your normal contacts.

You can try storing the contact on your SIM rather than linking it to something like your Google account (for Android anyway). You can then choose to only show contacts on your account and that contact won't show up...unless you force it to and it'll be saved in your SIM. Of course if you change/loose that SIM, you lose that contact so there's that.
