1 500gb SSD or 2, 256GB SSDs?

Not worth it at all, you won't feel any difference what so ever in responsiveness and the higher the SSD capacity the better the driver is... more redundancy cells, more cache available, sometimes even better controllers and so on so picking the single highest capacity SSD is always a better way to go.

 

Raid0 also doesn't scale performance linearly like that... this video is great on the matter although it's about NVMe:

Hello everyone! I've hosted a minecraft server for sometime now and am finally upgrading my hardware. I decided to go with a dell server that has 2x Xeon E5-2667v2 in it and i was wondering about storage, i was planning to get a 500GB SSD from samsung but then thought that maybe it would be better to get 2x 256gb ones and put them in RAID 0. I am aware about the failure chances and all that i always keep a backup on a separate system but i was wondering about speed. Each drive reads at about 550mb/s and writes at about 510mb/s so having them in RAID 0 would be pretty fast, but would it be to fast for the dual E5-2667v2?
