64GB of ram is wayyy overkill for gaming, get 16 gigs
A 3800X is equivalent/beats performance of 9900K at 1440p and is cheaper and cooler
You don't need NVMe for gaming, it only makes loading times 1 second faster vs SATA
watercooling is not for beginners and isn't much if at all better than air cooling
2080 super is only slightly better than a 2070 super whilst being way more expensive
