what happens if you pass 1A in the mobo fan header?

One of more of the fans won't spin properly or at all. Drawing more power than what header is rated for doesn't harm mobo AFAIK. Its just maximum amount that it will be able to supply.

If you use a splitter that when combining the fans the power consuption goes over 1A, the motherboard will be bricked? only the fan header overloaded will stop working forever or the fans just wont be able to pass 1A consumption?

You will probably cook the control chip responsible for that fan header.

You don't have a water pump header? Most water pump headers can handle 2amp(check your MB manual).

The pins are rated for 1A but they'll handle more.

The traces going to that header (the thin copper "wires" on the motherboard) will be affected if you connect too much to a fan header. If they're not designed wide enough they can overheat and break, as if they're fuses in your electrical panel, and your fan header will stop working.

Some headers have thicker traces, and those headers say they're recommended to use for water pumps, which may consume more than 1A of current.
