Does this look like a decent profile?

Just upgraded to a 3700x but the stock Wraith Max is way to loud, will upgrade the cooler later but for the mean time I just wanna be able to use my PC, how do you think that looks for a profile? Just don't wanna end up cooking my new chip! If you've got any advice on this that'd be great, sadly I don't seem to be able to move 0 otherwise I'd push them all up a little higher.

Ran a CPU-Z benchmark (I know not the best) and it seems like having the speed control on normal give me a better result so might not be the best profile after all.

I would look for a section in the BIOS where you don't have to use a GUI to set the curve and can just key-in the values.  Other than that I can't really tell you how that fan curve will work out.

That large jump at around 50C would personally drive me up a wall, but aside from that it's not bad. I'd probably do something a bit more like this on one of my systems:
