You don't need specific fans for specific cases or MBs. As long as the size fits in your case you're fine. Don't think too hard about it just pick them on pcpartspicker and if it says there's no compatibility issues then you're good.

I catered toward the top of the price range, since... I think if you are going to build you should build the best piece you can.

This is a very solid build given the price range, and will run your game very nicely (as well as whatever you want it to run in the future.)

Ryzen 5 already comes with a stock cooler. Just stick with that unless you're planning on overclocking.
