Will more than 60 fps causes tearing on 60hz monitor

You can also overclock your monitor but you'll still need to cap fps or enable vsync

Not always, depends on what you play.

Anything non-native will tear. Not sure how it depends on what you play. Of course it will be more noticeable depending on the game.

I sim race mostly without an fps cap or VSync and never see tearing.

There is probably tearing, just that you don't really see it. Different people see tearing differently(just like how different people see the difference between 144hz and 60hz differently)
