Most Ideal 3 monitor set up - need ideas

Currently, I am running 3 x 23" asus 60hz 1080p panels - 1060 6GB paired with a Ryzen 1600X overclocked to 4ghz

 

I am looking to build a new rig in the fall with the new ryzen cpus coming out and looking to bump up to a 2080 or something equivalent.

Seems like it wouldn't make any sense to do all that without upgrading my panels.

I like my monitors now but really would like to up them to around 27" and still have a triple setup - maybe do two side by side and one on top.

Right now, mine are all side by side.

I'd most likely want them to be 144hz as well as being 1440p or higher

 

Anyone have any personal experience with that type of setup? Don't care about price tags - could use all options in all price ranges

just get one of those huge 32:9 monitors.
