Is it safe to use router's USB for PC backup?

yea it will work fine, but if its just for backup, id just plug the usb hdd into your pc instead of the router.

I was thinking of a cheap way for backing up my PCs and was thinking of adding a USB to my router's USB port and then just using them as backups for my PCs. 

What sorta problems could I potentially run into if I do this?

For starters: USB 2.0 speeds.

If the router is crap it may corrupt data on the drive or not have enough power to run a HDD.

Definitely plug directly into the PC.  Even the best router its likely to be far far slower and could even slow down the broadband as both WiFi and routing can eat a lot of CPU power and NAS functionality could easily max out many router CPUs on its own.

Router:  Intel N100 (pfSense) WiFi6: Zyxel NWA210AX (1.7Gbit peak at 160Mhz)
WiFi5: Ubiquiti NanoHD OpenWRT (~500Mbit at 80Mhz) Switches: Netgear MS510TXUP, MS510TXPP, GS110EMX
ISPs: Zen Full Fibre 900 (~930Mbit down, 115Mbit up) + Three 5G (~800Mbit down, 115Mbit up)
Upgrading Laptop/Desktop CNVIo WiFi 5 cards to PCIe WiFi6e/7
