Looks like the first one you chose and the Samsung both have Read/Write speeds up to 550MB/s and 520MB/s.  The only difference is that the second one 4x bigger in terms of storage space.  A M.2 NVMe is faster, but also much more expensive.  Most people on a budget get an SSD or M.2 just large enough to put the operating system on and use standard hard drives for mass storage.

You should be using dual channel memory, not single channel.

Not true.

M.2 is simply the connection type. NVME is faster, if it's an M.2 SATA drive, it's the same as any other SATA drive.
