I upgraded my system to a vega 56 + ryzen 2700. My ram right now is 8gigs 2100, I have ordered two sticks of 2x8 3000mhz. How much of a performance boost will I see, if any?

Well you'll be able to have more things open at once, and possibly some better CPU perfs since Ryzen works better with fast memory.

You're going to see better performance in game. Ryzen is dependent on RAM speeds so you'll get some FPS jumps and render times lowered.

I spent $2500 on building my PC and all i do with it is play no games atm & watch anime at 1080p(finally) watch YT and write essays...  nothing, it just sits there collecting dust...

Your CPU overall will run better/faster. Ryzen uses infinity fabric, which runs at the speed of your RAM. Which means you will see a small boost in FPS and maybe other tasks as well. You might also experience a faster, more responsive windows experience. It's definitely beneficial..
