i was looking to buy a processor only for esports games, and i want to pair it with a 3200mhz ram cl16. ryzen 7 2700x or i7 8700?

Esports titles don't need that kind of a CPU. They're typically not that multithreaded in nature. A 9600K would probably be better.

Unless streaming said games is a priority

i mean its esports. that is overkill hardware for it. either is good. 2700x if you are considering streaming or upgrading within 2020. the 8700 otherwise. but remember you need to buy an aftermarket cooler with the 8700. the 2700x can use the included cooler
