If you have 1200USD budget, you don't want to get 8700k. Get down to 8600k/9600k for 144Hz or R5 2600 if you plan playing on a 60Hz monitor.

Here is a balance build for 1200USD

Main system: Ryzen 7 7800X3D / Asus ROG Strix B650E / G.Skill Trident Z5 NEO 32GB 6000Mhz / Powercolor RX 7900 XTX Red Devil/ EVGA 750W GQ / NZXT H5 Flow

Why the R5 I thought the i7 8700k was a better Processor

It is, but not at your budget.

I would bump up to 3200Mhz RAM, Ryzen likes faster RAM.

difference between 3000 and 3200 and their prices isn't worth it. I saved $30 on a 2x8 kit by bumping down to 3000 and then OCed it to 3200 .. even then i didn't get a realistic bump in performance arguably with in margin of error for gaming use

Should have no issues running it on max settings.

What are your  suggestions on Monitors

Depends on what resolution and refresh rate you are aiming for with that build. You could do 1080p or 1440p, I would stay away from 4k though for another few years.
