@The Pi really has the best answer here. you don't need to worry, just like when dual channel appeared, you could still single channel and not see much of a difference. the speed numbers just won't look as pretty.

Quad channel would be ideal of course but since you're likely coming from a previous dual channel build you won't notice.

A 12V battery bank will work nicely with extra regulation and some trial and error for the lcd.
He is using a jetson for this, battery would be fine.

Assuming your PSU is up the task the SLI route could represent good value (though with the issues SLI presents) a 980 however is far more elegant.
It's really a case of value vs ease of use which is up to you to decide which is preferable.

Reference designs tend to work well in sli as they exhaust out the back of your case.

TheQRoks was making the point that even older cards are fine for gaming and don't suddenly become useless once new things are lauched.
In a couple of years 4k will be popular and people will likely mock 1080p in the same way.

Games vary in terms of cpu usage. So it's never a case of "what's the best gpu this cpu can handle".
And if all you care about is games then there's nothing wrong with limiting a higher tier gpu with a lower tier cpu.
You may lose some fps compared to a high end cpu (almost always a very small amount) but I've never seen a modern cpu bottleneck so bad that a higher performing gpu performs the same as a lower tier one.
