Running them in surround? You're looking at 24,883,200 pixels for 3x 4K (going off 3840x2160), vs 33,177,600 for 8K (7680x4230). 8K is still 33% more pixels, so take a look-see at 8K benches for the 3090 and expect it to run a decent chunk faster than that (those will be far easier to find than triple 4K). Do keep in mind you'd also be running 16:3 though. Many games can do some funky stuff with 21:9 - mostly just in cutscenes though - and 16:3 is much wider than that.
IIRC it's 8-15% slower depending on title, so yeah a 3080 is definitely the better value seeing as it's half the price. But if budget isn't an issue, the 3090 is going to push massive resolutions better than a 3080. Also has the beefy VRAM buffer. Most games right now do not push past 10GB unless you're running games like Skyrim with massive texture mods, but it is something to consider if you run very VRAM hungry stuff.
I think (cost/performance wise) you'd be better off getting a 3080. But gaming on more than one 4k display will prove to be tough regardless. Will depend on the game
