The problem with just "picking something from tier A" is that that still doesn't mean it'll work fine.
From what I've seen in the last little while, Seasonic's Prime units have trouble keeping up with the 3080's high transient spikes, causing the OCP to trip and therefore resulting in shutdowns (and at that point, OP could just keep their CX750M and just lower the power limit on the 3080). Just as an example.
Pick something from Tier A, and watch the r/buildapcsales subreddit for sales and re-stocks.
Otherwise, you're probably going to pay twice as much as what you would have in 2019 unfortunately if you can even find them. It's a good thing you're starting to look now as it might take a month for a specific model to come in stock at a non-ridiculous price.
