That makes sense, I really appreciate the input. I feel silly getting wrapped up in the hype for the new line but man I am so excited to finally build a new PC. I currently have an RX480 that sounds like its on its last legs.
Some of the 3000 series GPUs will be announced in less than a month. Nvidia just teased the 31st as the date but a few days ago, Gamers Nexus said their board partners said the launch will be September 9th. Reviews should be soon after, I would wait for reviews before buying.
It might be a few months, but I think it will be worth waiting.
Assuming they'll be coming out around the same time as the next-gen GPUs, I'd say it'd be worth it, even if just to avoid the possibility of buyer's remorse.
More cores don't hurt, but games still favour faster cores over loads of slower ones (not saying that the cores on the 3900X are slow, it's just that Intel is still slightly ahead on that aspect).
If you're just gaming, it makes sense to go with something like an i5-10600K, unless you're only playing single-player games at 4K. Not to say that the list you put together isn't good, those are all quality parts, but strictly for gaming it's not exactly the best way to spend your money. Same thing with the 32GB of RAM, 16GB will do just as well.

I probably wouldn't order the parts now though. For all we know, AMD's Zen 3 CPUs could be out by the time next-gen GPUs are released, and if those actually match or even beat Intel when it comes to gaming performance, that'd probably be the way to go.
