I use the DAC to connect my NAS to the Netgear switch on its single SFP+ socket, which you could do with the Mikrotik for every PC - if they are within 5m of the switch (might be a stretch).  The catch is the Mikrotik only has four SFP+ sockets and one Gigabit RJ45 (which presumably would go to your router).

In my case as I have the Netgear, the SFP+ connects to my NAS, the single RJ45 10Gbit port connects to a switch in another room which has two 10Gbit RJ45 sockets on it.  My gaming PC then connects to the other 10Gbit port on that other switch.

Back on the main switch I then have 2x 2.5Gbit ports, 2x5Gbit ports, 4x1Gbit ports.  My laptop connects using a USB 2.5Gbit adapter and my upscaling PC connects using a USB 5Gbit (limited to 3.6Gbit due to USB overheads) adapter.

imo i'd stick with the case and deal with the airflow to be able to get a little better performance with the budget

I would go for something like this. This motherboard will support 4th and probably 5th gen ryzen, and you are able to add another 32gb ram to make 64 later down the line.
Sorry it is a bit over $1000 but It is worth paying the extra
