There are multiple factors that will determine whether you will be able to use all of your available bandwidth on a single device:
No other devices are using bandwidth You have a reliable connection to your router, either wired or wireless Your ISP guarantees transfer speeds of 500Mb/s down, 70Mb/s up in your contract ISPs like Comcast, Charter, AT&T often will not guarantee their speeds during peak hours If using Ethernet: All cables are CAT5e or above The Ethernet port on your router/switch supports 10/100/1000 -

Theoretically, you can do 500/70, but that likely won’t happen.
Typically with cable from my experience, once you saturate your upload, your download starts to be negatively affected. I’m actually not entirely sure why this is though…

What did you use to remove the app? Did you just delete it?

Have you tried playing on a system with a known working high refresh rate monitor to see if you can feel a difference? You may just not be as sensitive to high refresh rates.

Apparently the Bose 700s have improved latency, but idk how good it is. One thing to keep in mind though is that there is a audio cable that is included with them (terminating in a 1/8in connector), which I would think would make latency a non-issue. P.S., apparently the mic in the Bose 700s isn't bad, but I'd still think a separate mic would be better, although it seems like you could probably get by for a little bit without a seperate mic.
you mentioned that the bose 700s are a purchase for music mostly, if that isn't on the go and utilizing the ANC, you'd be much better off getting a different headphone solution for $400. For example, the HD6XXs and the Schiit Audio Magni would sound significantly better and would have more of an upgrade path, at the expense of portability, as the headphones are open-back.
