Yea. Unless you have a need to go NVIDIA, safe the bit of money and go AMD. They'll be just fine enough.

As said above by @filpo mostly it'll come down if you need CUDA or not. AMD has productivity cores but pretty much the whole industry's forgotten about them. Need productivity? Get NVIDIA. Don't? Safe the cash, get AMD.
Only slight factor here is the marginally better performance in Starfield for NVIDIA cards. If you're planning only playing only one playthrough then don't let it be a factor unless you're planning to spend hundreds of hours in Starfield, NVIDIA would be a bigger benefit.

You can hold off on upgrading your GPU as it should suffice for about 2.5 years. However, if needed, consider the 4070 for ray tracing capabilities(https://www.amazon.co.uk/dp/B0BZDYZ4V5?tag=pcp0f-21&linkCode=ogi&th=1).
If you plan to use an AMD GPU, consider the 7800 or 7800XT as good options(https://www.amazon.co.uk/dp/B0CFWM1LNH?tag=pcp0f-21&linkCode=ogi&th=1&psc=1).
Consider upgrading the CPU to a 5800X3D for your 3rd gen Ryzen 7 setup, though other CPUs are also viable choices.
In summary, go for the Ryzen 7 5800X3D, and consider upgrading to a 4070(PSU is enough).

I would go CPU the 3070 is still an ok gpu and it should be fine for the next year or so. I would upgrade the CPU to a ryzen 7 5800x3d.

Yes the RMx is a Tier A PSU with 10-year warranty, I have owned several Corsair PSU's over the years, including an RMx, all of which have served me well and issue free. I can highly recommend the RMx.
It comes in an all white versions with white sleeved cables as well. So while it is a price premium (only £10 right now), if you wanted to buy sleeved cables anyways it justifies the minor price increase.

The RM850X is great PSU. I have a Corsair RM1000i in my personal rig and another Corsair SF600 in the wife's computer, their PSUs, particularly in the price range that you are looking at are great. Super Flower also have some white PSUs, which are good quality under their Leadex lineup, might be worth looking into.

The wattage should be fine for your new build so in that regard it's completely fine. However, if you want something with higher efficiency and better quality, then yes, go ahead and change it.

While 750W is enough power, the primary concern here is the quality of this unit and how it would hold up with voltage spikes etc. I highly recommend upgrading if you are getting a 3070. Not worth keeping a cheap PSU that could potentially damage your hardware.

For a 3700x / 3070 build I would recommend no less than a Tier A unit, and 750W is more than enough. (Current PSU it Tier C)

I agree with ProjectBox, no real difference there.
Either keep your CPU and spend that money on a PSU or go for a 3000 series CPU or wait and gor for a 4000 series when they come out

UPDATE:
I ordered a set of white extensions anyway as I wanted the cables to suit the build
The motherboard worked fine with only the 8 pin but the CPU would not boost to 4.4GHz. I added the 4pin and everything works fine now.
