If you don't plan on using dlss then yeah take the performance bump 

do not get a 9700k. It does not have hyper threading, and as such only has 8 threads. Get a 9900k if possible or switch platforms, because intel really gimped almost every cpu that generation by disabling it.

I've tried so many times to get a FE card from best buy with no luck. The in store drops never have any at my local store, closest one is almost 3 hours away

So if you have an i5-8400 or something similar and have an asus mobo not sure if other boards support it but on my asus prime h310m-k just from enabling speedstep the cpu was going at 3.9ghz all core from the stock 3.8 so if anyone has a gpu higher than 1050ti paired with i5-8400 you will a very good performance gain

Go with the 3080 for sure. 3440x1440 is demanding and you can gain some decent fps using dlss

@unclewebb has helped me out with the power limits stuff and it made a huge difference with my rig. I don't know if yours will be as massive as mine but it's worth trying

The Gigabyte M27Q has a weird subpixel layout. Instead of the usual rgb it is bgr, it bothers some people when it comes to text on screen like web pages. I had this monitor and it didn't bother me at all. It was very good for gaming and I feel it's priced really good for what you get performance wise.
The samsung G5 you linked I haven't seen that monitor before, if it's anything like the other G5 monitor I would avoid it.
The Msi Monitor I have seen numerous people say it's really good.
 
Out of the 3 it's either the gigabyte or the MSI. I would watch videos on both showing the menus, the stands and pick which one you like best. Probably can't go wrong with either of them

Take the week and do something else. That way when you get your card your pumped up to use it and enjoy it that much more.
