The difference in price between a I5 and an I7 is crazy, if there's so many different cpu's then why are they still "expensive"?

Segmentation. Companies want to make more money, so they set the prices in a way to get you to pay a lot more for them.
For example, the difference between an i5 and an i7 (desktop) used to just be Hyper-threading and a bump in clock speed. Now, i7s are basically just i5s with two (33%) more cores, except they're still charging 50% more.Everyone does it, though. Intel also has their brand to back them up. To quote, "Value is in the eye of the beholder."
