    Yes the 2600 is easily good enough. Ryzen 2000 can deal with all gpu's other than a 2080ti which it bottlenecks very slightly. The 2700/x isn't necessary for gaming and you'd only need the cores if you wanted really good looking streams or other heavy non-gaming workloads.
     
    And yes undervolting/overclocking vega is the way to go with it. You don't absolutely have to do it or anything, you can keep it at stock and it'll be just fine.

    And finally an RX 580 like this one.
     
    There are other 580s that aren't bright blue, but that is the cheapest 8GB model, and it's pretty good at that. All of those parts should run you anywhere from 350-400 Euros, and should last you a while to come at 1080p.
     
    You can measure your RAM usage while playing games, and if you are running out, then I would recommend getting a 2x8GB kit or a 4x4 GB kit, so you have 16 instead of 8. However, you most likely don't need to upgrade your RAM.
