Xubuntu 18.04. I've been using Xubuntu since version 8.10 (from 10/2008) and IMO it's a lot better than Ubuntu, especially for an older PC like the one you have.

Just stick to the most mainstream: Ubuntu.

Might be a good idea to update your GF's Mac. OS X Lion has been end of support for years, and the 2011 can run High Sierra no problem. 
 
You need OS X mountain lion minimum to work with Sierra and High Sierra installers iirc.

Linux from scratch is an already functioning OS for you to tweak with. You won't probably need to do anything except working with the command lines. Coding your own is on an entire different league. There is a difference between creation and utilization my friend.

I was watching some old 90's shows like home improvement and even king of the hill and I noticed they made gay jokes more then a few times in home improvement and one episode of king of the hill, all I thought was if this came out this day and age there would be a ton of people raging on twitter over it.

^^^ It's stereotyping yeah, but not racism. Tfw stereotypes used to be funny and everyone knew they were exaggerations but now I guess people just ran out of other stuff to be offended at and starting picking on humorous stereotypes too? I grew up with the classic Buggs Bunny and such cartoons since they were the ones my dad approved of and they're hilarious, and most of them are just an exaggerated stereotype. That's why they're funny, they're just real enough that they aren't complete foolishness, but then they're so silly that everyone knows no one would really do that, so we laugh at them.
