For the top spec configurations apples pricing isn't that much of a rip off and appeals greatly to companies doing professional work (due to the fact that they are ordering from a large company rather than having matt the tech guy build it for a bit cheaper).

The monitor is also excellent as it can cost up to tens of thousands of dollars for a good reference monitor so it will obviously appeal to companies and people looking to get into the work (999 for a stand is ridiculous tho and the 129 for the literal metal plate with wholes in it is also a rip off)

The lower end models of the mac pro make bascally no sense as it is basically 6000 for
a cpu that is bascally a 9900k 8 c 16t at a lower clockspeed cool mobo i guess ecc memory 256gigs (my laptop has more stoarge) a 580 a big psu This item is intended mostly for the professional workforce and actually when you look at current offerings isnt even that awful of a deal so i dont see why everyone is making a huge fuss about this

instead of the 2700x you can get the 2700 and overclock it and you will get the same or better performance as the 2700x (you might need to get a cooler then though)

6 cores can oc to a decent speed should be fine for most streaming
the 1070 should be able to run most of those games at a decent fps maxing it out at 144 is pushing it a but if you want an upgrade your gpu that will be expensive I put the option there if you want it
going from 4c 4t to 4c 8t also higher closckspeed
you wont need to upgrade your mobo but you will be limited by upgrades in the future as the gen was outdated a few years ago
