I would personally love to combine everything into an HTPC and get that up and running using Kodi or something similar, but it will require maintenance down the road

I think that option 3 will be the one requiring you to maintain it the most. I don't understand why you can't add a firestick or something similar to the setup they already have and know how to use? I know that my parents would have a hard time adapting to everything being changed at once.

I don't think the price of a new case is that high compared to three high end graphics cards for mining. And unless you can afford the graphic cards at the moment I would wait.
You might even be able to resell your micro atx case later (to a Scrap Yard Wars builder ;P )

I have used OBS as a screen recorder in the past. I thought it was pretty nice. If you have a GeForce graphics card you can use shadow play as a screen recorder.
