    Assuming you haven’t made a desktop Frankenstein using an Alienware 17 R4 motherboard, you aren’t going to get an Evo 212 in there.
     
    However, @stateofpsychosis is correct, your lack of stability is likely coming from the undervolt.
     
    I did some research on the 1070 AWs and it seems they like to have cooling problems at stock settings. Most people seem to point at the CPU’s insane heat and Dell’s thermal paste. Thus, you’re pretty much left with these options:
     
    1. Return it/sell it, get a laptop that can cool itself better.
    2. Open it up and get better paste in there (voids warranty).
    3. Try to undervolt less, possibly try external cooling solutions.

    That's your issue then.
    That error specifically happens when your CPU doesn't have enough voltage.
    I've seen this again and again on multiple computers.
    This is actually one of my last tests I do on overclocks.
    Monitor the reliability history and watch for this specific error.
    Bump it back up to stock and see if it goes away.

    It shows unexpected shutdown errors in the screenshot you shared of your reliability history above.
     
    I'm absolutely sure that this is causing you issues and it's something you might not notice a problem with at first.
    What are your temps with stock voltages? Anything under 80 degrees Celsius is fine.
    If they're too hot, pick up a cheap air cooler like the evo 212 instead of choking your CPU from the voltage it needs. It's extremely easy to think you're stable and not be. Even 24 hour stress tests can not show these kinds of stability problems.
     
    If you're not going to follow the most important troubleshooting step I give you to determine if this is the problem, I can't really help beyond this. 
    I've seen these same errors come up too many times when CPU's don't have enough voltage to have even a shred of doubt in my mind about it, so try it. It's the only way to know

    The 750Ti is faster than both of those cards and can be picked up for about $80.

    I have! I sort of ran into the same issue. I was making a budget build just for fun and found boards that would (easily) work with the 8100 to drive up the cost too far for something I was basically building to sit still and look pretty.

    I got a Ryzen 1300X for $99 on Black Friday and shoved it into my first ever PC build. I mainly use the PC for sims (FSX, TS, and soon XP11) and for the price I'm very happy. I built two more units, one with a Pentium G4400 and the other with a Core i3-7100. I'm impressed with what a cheap CPU can actually handle!

    I've had a Ryzen-based system for a little under 3 months now, and decided it was time to release my thoughts of the platform to the world wide web. Went out to my local Micro Center in January and picked myself up a Ryzen 5 1600 with an ASRock AB350-Pro4(nothing beats the CPU/motherboard deals at Micro Center, let me tell you that).
     
    Going to go over a few different areas here, such as performance, temperature, etc.
     
    I am very pleased with this CPU, it holds up well under everything I've thrown at it. From running a virtual machine(Bluestacks, didn't keep it around long due to disk space) to gaming, it does everything really nicely. Loving the 12 threads as well, makes the impact of background processes and tasks only noticeable when I run out of RAM.
     
    I haven't ran a lot of benchmarks on this, but I did run Cinebench R15 while I was overclocking. Got this puppy to 3.7Ghz on stock voltage in Ryzen Master, with a score of ~2000 IIRC(don't have it on hand). It also paired really well with my GTX 780, getting solid 60fps at 1080p Medium settings in Fortnite all the time. PUBG takes a little more coaxing to run well, it doesn't like running at 1080p at all so in order to have any kind of performance I'm stuck at 720p Low. Minecraft runs like a champion, although I have to enable V-Sync to avoid problems with framerates in the 300 range.
     
    It also overclocks pretty well, even with the stock cooler(because I'm a cheap person that can't afford a higher end CPU cooler). Temperatures are staying pretty low barely reaching 60C, even when running Cinebench at 3.7Ghz. Guess there's something to be said for high intake levels in a low ambient temperature environment. I haven't ran an Aida64 stress test yet for longer than an hour, but it held up pretty well under that too. Might even do some CPU folding once I figure out how to get that working on Windows 10 since I've got the CPU power to spare...
     
    Unrelated note, loving my GTX 780 as well even in 2018. The current GPU market makes me all the more grateful that my friend was generous and let me have it for free. <3
     
    That pretty much concludes my thoughts so far, I might end up doing a more in-depth review once I've had it for a year.

    Beautiful case @Crunchy Dragon! There's even a white version of it too that looks pretty cool to me. With this kind of a budget though, I'd ask her what colours she would want in her PC.

    In two weeks I’ll be picking up a very rare first generation smart. It’s a 2005 with 50,000 miles and for dirt cheap.
     
    So...I already have three smarts. At least every smart I have is different! One of each generation and now a convertible!
     
    Here are the current three, for reference. The blue one is also an offroader project.

    Welcome to the forum!
     
    Most of the time with builds we use PCPartPicker here. It gives you the lowest prices, and helps with compatibility.
    Only really useful if you're in one of the supported countries though. There's a menu at the top left where you can change it.
     
    The build looks fine, though I'd try and get faster RAM, and skip the network card as the motherboard already has one.
    I have a feeling there are better PSUs out there as well.

    As you've provided reasons for your disagreements, I'll respond.
     
    I totally agree that with a large game library, having a mechanical drive for the less played or less drive using games makes sense. My concern was that the 120gb drive may run out of space before OP has everything he needs installed there, and will likely not have enough space for any large games. I had a very similar set up to yours (250gb boot ssd with a few games and the rest on a 1tb HDD) and it worked reasonably well. 
     
    My ram suggested wasn't for the games (I don't know how much ram games really use these days, I've got enough that I don't need to worry and I don't game that much anyway) but for the video editing. Depending on what editing suite is in use, ram usage will go through the roof (and the page file will probably be used *heavily*, severely degrading the system performance). For example, I had a 720p 2minute Premiere Pro project open and a few 720p compositions open in After effects, and during rendering, AE was using 14GB of my systems 16, and even at idle, after conforming audio and previews, premiere and AE suck up a lot. 
     
    Editing was my reasoning for the Cpu upgrade too. 
     
    I would agree almost entirely with you if it was gaming only.
