Unraid doesn't fully utilize the e cores from what I remember and they will just be additional ones without hyper threading to it. 
Depending on what the windows vm is going to be expected to do and if you want to isolate those cores or not. 
If it isn't much the 12400 would be fine. 
If it is going to be high work load or you are isolating, go faster. 

Downloading torrents would be sketchy yes. 
Just with any system, it is a secure as you make it. 
I like the snapshot automation that truenas offers. That way if I do get hit with ransomware, shutdown everything and clear out the source of the attack and then in truenas revert the snapshot before it happened and my data is back. 

Based on your testing then, it sounds like that isn't an option either. 
Just generate a secure password to provide them. 
They would also need to trust you since you are housing their data anyway. So trust would be implied by them accepting your offer to host the storage. 

I would try using this site to scan those ports to make sure they are actually open. 
It is possible that they are blocked by something else or your isp.

Yeah I tried it as well. It is very picky about what you run it on and how you run it. I would recommend against it as well. 

I agree. It wouldn't even be noticeable in the 15 bay storinator hl-15 maybe in the massive one though but most home labs aren't going to be using that. 

With advancements I don't think it is needed as much as it was back in like 2017. It is more expensive to use helium so they have inventive to not use it when they can. 
They were able to get better density with using helium due to the lower turbulence vs the air usage.

100% this. SHR drives are hard to get a reliable rebuild in my experience with a failure rate of like 50% of the time it bombs on me.

Like the other reply, I would suggest switching to scale over core. 
As for remote access, you can run a wireguard or openvpn server to connect back home to it. 
That can be hosted on truenas itself or if your router can act as a VPN server it can do it as well. 
Alternatively, you can look into something like tailscale as well. 

Like the previous comment, windows will be unable to read those drives. 
But what you can do is install windows pro, setup hyper v and install truenas into a vm and import your existing pool. 
This way you can still use truenas for storage but run anything else you want under windows. 
You might lose a little performance doing it this way but not something you would notice outside of benchmarks. 
Just make sure if the storage is encrypted you backup the key to it. 

As this is my personal experience, I wouldn't use smr drives in a nas.
I tested it on a spare setup and it was slow on writes and rebuilding a failed drive was causing errors that could lead to data loss sometimes. 
Rebuild on an array of 4 1tb drives with one new drive took the system about 37 hours. 

It would also be encoding the stream that it sends. It is a two part process no? 

Oh and also try checking the firewall on the host machine if you haven't already.

Largely I have had better luck getting nvidia to work with transcoding in Linux. The 650 won't have the nvenc encoder for acceleration though, but the 1050 does.

For a couple of users, the hardware you have will work fine. 
Jellyfin for GPU encoding might be a little odd as I don't know if it supports intel but it might. I don't use that app. 
Toss on linux mint and docker and you can start setting that stuff up.

Ecc is also just a nice to have. Been running without it at home for over 6 years and I haven't had any problems.

Disable over clocks and check your hardware and cables.

I would suggest trying truenas scale. 
That can handle the storage and zfs parts and you can use their built in apps for some things and set paths for them and setup a vm for the game server side of things. 
I would also put next cloud in an Ubuntu vm and use their aio docker setup as that works very well and can be configured easily for daily backups. 

Non ecc ram is totally fine. ECC is a nice to have but unless it is in a higher interference environment it is highly unlikely that it would be an issue. 
I have had many systems with basic ddr4 ram for years and never ram into issues with any of them. 

Since you just built it and there is no os, you don't need to do anything with bitlocker.
