what is better for gaming, faster cpu like overclocked ryzen 3 1200  with 8gb or ryzen 3 1200 with cheaper board and 16 gb of ram?

    16GB RAM. You can overclock to a certain point on any board, but there are quite a few games that will use 8GB just for themselves.
