500W is fine, 600W is maybe preferred, you won't go over 300W undoing a gaming load anyways

and just double check that the motherboard has USB bios flashing, think it does.
 
and don't try to use a radiator in that case, good for air cooling only.

Taking this plan at face value and without more information, there are obvious issues and I've mentioned some of them in the OP.

Access to real-time video surveillance of when children leave their home or school, their habits of where they go, would make it easy for a kidnapper to target and abduct a child with very-low risk of being caught.
 
And the ability to know when people in a house and their neighbours are all away from home would be like an open invitation to thieves.

I think on low settings at 1440p the gtx 1060 for 40 to 50 fps will be ok, but I recommend to at least a gtx 1070 for 1440p. The 5700 is much more powerful. It's in the class of the 2060S and 2070. The 1660 Ti isn't worth considering. And you will easily b able to push the 5700 to the max. It won't be an issue

Really should have got a G4560 + B250 instead of that FX.
