The h100i v2 would suffice but you shouldn't really overclock a 12 cores processor on a mini-ITX motherboard in my humble opinion.

As @Princess Cadence stated, it would be best not to overclock in this chassis with this cooler, as you would need a delid on the CPU and active cooling on the VRM to sustain even a modest OC under the restrictions of the ITX form factor.

I would also recommend an undervolt, to help assist with taming the heat of the X299 platform. This will not only assist with the longevity of the CPU, it will also assist with noise as you will not need to run your fans nearly as fast to keep the CPU at a reasonable temperature.

As for which cooler is the best, most of them use similar pumps (aside from Cooler Master), so between Corsair, EVGA and NZXT, you are getting nearly identical performance, with the only difference being style and fan noise/performance. I personally use an EVGA CLC, and while I find their fans to be less than ideal from both an aesthetic and acoustic perspective, they certainly get the job done. If it were me, I'd look for high performance aftermarket fans, since it's likely not an option for you to be able to use push/pull in an ITX chassis, so you will need all the static pressure you can get.

I'd say the H100i, the EVGA 240, or the NZXT 240mm AIO's are my recommendation, since they all perform identically and I have an idea of their relative performance. I have no experience with the CM AIO's, so I cannot give an educated opinion on those AIO's.

It's just a type of RAM produced by Samsung that happens to play nicely with Ryzen processors at high clock speeds. If you don't have Ryzen, B-Die vs E-Die vs Hynix doesn't really matter to you. If you are rocking a Ryzen CPU and you want to reliably get your RAM to 3200 MHz, there are two sure-fire ways to get B-Die:
3200MHz RAM kits with a CL of 14 are all but guaranteed to be Samsung B-Die Any RAM kit rated higher than 3200MHz is guaranteed B-Die, as (as of a couple months ago, anyway) no other memory OEM clocks their RAM that high.

One is certified for Dual channel and the other is certified for Dual/Quad channel.  You can probably guess, which is which.
