Tbh you can just get a PCI-E riser from that 1x slot to a 16x slot and put a graphics card in there aswell, any more and you pretty much need another motherboard (that's why mining specific motherboards have lots of 1x slots). As for PSU I would check the PSU tier list, a generic 750w could be bad.

With the current price of graphics cards it's very hard to build a pc under a budget. Does the 1k include monitor and peripherals or only the pc?

Yes you can overclock it no problem, just pay attention to the temperatures and increase fan speed if they get a little too high for comfort.

So HTC went back to the jack huh? They're back on my buy list. 
 
Honestly the reason I ditched HTC after the One M9 and got an S8+ (and now an S10+) was because of the jack. 

The only downside is that the 1080ti they are offering you has a blower cooler. Otherwise it's simply just better in every way (exept power consumption).

At that price range the g920 is the best option. I have the g29 which is basically the same thing with ps3/4 and pc support but no xbox one support. If you really need the xbox one compatibility get the g920, if not get the g29 cause it has more buttons that you can freely map on the pc. They both have clutch pedals but ofc you can just ignore it if you want. Logitech sells a stick shifter for about 60$ aswell if you're going for realism, but the paddles work good and they are metal so they won't break as easily as plastic paddles.

Yes, it's fine as long as it fits. You have to get a LiPo charger for it (for the love of god don't use your Ni-Mh charger with a lipo). Also I would reccomend the LiPo being a hardcase, you'll never know if you crash hard enough and something punctures the battery...

When Ducky is an option I would always choose Ducky. In quality it's superior but it''s up to you to decide if it's worth spending 75 extra dollars for it.

The corsair keyboard pretty much does everything that the razer one does, but better.

If you are using windows 10 you can change typing languages in the taskbar on the right (if you have multiple installed). Some programs mess with that and change it (I noted H1Z1 does this every time).
