    Looking on Wikipedia, Office 2016 and 2019 share major version number, latest 2016 version is 16.0.10325.20082 and 2019 is 16.0.11601.20204.
    It's just a version thing it seems.

    No. Intel sells more CPUs to just one of the big OEMs like Dell than AMD all together. So even if the entire DIY sector went AMD, Intel would still sell many times more than AMD.

    CPU-Z was showing it correctly then.
    If the memory here is really running at 1600MT/s, CPU-Z would show it running at 800MHz.

    It could just be that Windows has changed to showing actual operating frequency instead of effective transfer speed?
    Since DDR4-3200 operates at 1600MHz and has an effective speed of 3200MT/s.

    DDR = Double Data Rate so operating at 800MHz it has an effective transfer speed of 1600MT/s.

    Google found some M.2 key E to miniPCIe adapters which could maybe work with PV170.

    If you get a platform that supports PCIe bifurcation, which I think Ryzen supports. Unlikely that older LGA1150 would support it.
    And then get adapters like QIP4X-PCIE16XB01 to 2x DB525-D8XF014XXYY or 2x DIPCIE4XD01.

    GPUs don't operate in bits per second, rather floating point operations per second.
    And a single pixel requires more than a single operation to be calculated.
    And with that diagram, the diagram is more like this...

    With the PCIe, you only load few gigabytes worth of assets, models, textures and such. And those are fed by a HDD/SSD usually operating at SATA speeds so under 600MB/s.
    After that the GPU does a lot of read and write operations while rendering a frame and that's where the bandwidth comes into play.
