Just start out with something that interests you a lot, like for me it was photography and PCs and phones. I got a camera and wanted to know how to take better pictures and one thing lead to another and weeks and months pass and then you know things, not because you forced yourself to know them, but because you were curious and it has a purpose to you in everyday life. I keep up to date on tech sites to see whats new and if there is something interesting I'll do a little more research. I would say that most of what I know and learnt, was because I had to know and understand it so solve a problem (ex: fixing pc, taking better pictures, deciding what phone to buy, etc.)

I can understand that struggle have used old school monitors like that. I'm actually really intrigued by the ultrawide monitors and plan on buying one when I upgrade in a year or so

Depends on what kind of switch you want. I would recommend looking into the different kinds. I have used Cherry MX Red, Black, Brown and Blue and like the Blue the most followed by the Browns, but you might prefer the black or reds. Maybe you can go to a store and try out the different kinds.
I really liked my Corsair K70 and I love my Qpad, but the logitech g710 is really good too. Of course those are only a options in the wide world of mechanical keyboards

The iPhone 5se has not even been confirmed, nor has there been a date set for the presentation of the phone. Most likely if Apple stays true to their past it will cost more than it is worth. If you can afford an iPhone 6s or 6s Plus I would get that. Even though I'm a die hard Android fan the 6s gets me all excited. Otherwise you can get the iPhone 6 or wait for the unconfirmed device to come sometime and when it is released you will be told to wait for the iPhone 7

If you are intersted in PCs and want to build your own PC and you weren't talked into it I'm sure you will be able to trouble shoot anything. If you are worrying about not having any support you can maybe buy all your parts through a local retailer who can help you or replace anything if needed. If building a PC was generally difficult not as many people would recommend doing it

you can also go with the newer canon 750d at a few extra €...all cameras have a standard tripod mount
