What's good for games is generally not good for servers/workstations, and vice versa. Eg, lots of cores in a workstation is good since the applications will generally use all of the cores, while in games only 3 or 4 cores would get used, so you'd want fast cores. Also when you're overclocking those servers will go down, and instability could mean you lose data when the PC crashes.
Since budget is unlimited, get 2 systems. 1 server/render box/workstation and 1 gaming/overclocking machine.
