When I download a 1 GB update it's just replacing existing data in the software with the altered files; which means I'm not ACTUALLY losing another 1 GB of storage on my drive, right?

Linux actually breaks this out nicely and will say something like "this update will download 1 GB and will require 100 MB of additional space. Would you like to continue?"
If yours doesn't, there's no real way to know. In theory, it should just replace existing files, meaning any net increase (or decrease) in total space used is likely small, but not all installers are that smart. For example, AMD drivers extract to a temp location (C:\AMD) and never remove themselves, so they just build up over time unless you do something about it manually.
