Looking at IP cameras on Amazon. One of the key features of one I found is "Works great with lots of PoE". Excellent. I love lots of PoE on my devices.

    making a home security system? Also I'm still learning about PoE, I know it requires specific devices on each side, but does the cord in the middle have to be rated especially for it?

    Just looking at adding couple of cameras around the house and considering buying a new NAS for it so I can keep the camera traffic from slowing down the main network. 

    There's no special PoE rating for cables, just your standard Ethernet cable works fine, generally the higher than Cat the better, but that goes for pretty much anything to do with Ethernet. Something to note on PoE devices is that quite a lot of the cheaper ones are just passive PoE devices, so they may receive power, but don't negotiate power requirements to save power or support remote rebooting like 802.3af/at compatible devices do.
