I would recommend monitors with a thin bezel & an IPS panel.

I would recommend a 7970 over two 7870s in crossfire, because of heat, space & scaling.
An overclocked 7970 is already almost twice as fast as a 7870 so you will have plenty of performance.
Also I don't recommend any Gigabyte or XFX card because they have locked voltage.

Using three monitors in eyefinity can be really fun, but not two monitors, having that bezel in the middle of your field of view really destroys the experience.
If you want eyefinity get 3 monitors, otherwise just play on a single display.

The jump from the 7870 to the 7950 is well worth it, you get significantly better performance & more memory for your dollar, the jump from 7950 to 7970 is less significant but none the less it is still there.

    I would recommend grabbing a single 7950 or a single 7970 & overclocking them.
The models I'd recommend are the HIS IceQ, Sapphire Dual X & MSI Twinfrozr III.

    These results are WITHOUT over-volting.

I really do have to recommend the MSI twin frozr 3. I just got mine yesterday and I'm at 1100/1350 on stock voltages and never gets hotter than 70c while stress testing!

I can't help you with specific frames and that but I will suggest that you grab a MSI 7870 HAWK as it is a ridiculous overclocker, looks amazing, has great cooling. It is by far the best 7870 in my opinion.

Not sure that it's a good idea to game on two monitors, having the monitor bezel in the middle will ruin the experience.

Well xfired 7870's will be faster but xfire/SLI is alot more work that single card setups so I would suggest going with a single 7970 but if you don't mind putting in the additional effort then the 7870's xfired will give you more performance. The MSI 7870 HAWK is the best, I'm not saying the gigabyte one is bad but HAWK is better.
