Installing Windows 7 will be very difficult.
It is worth it to just install Windows 10 and try to use your key. Paul from Paul's Hardware mentions that he does this and it often works (and sometimes doesn't).

Put the latest Windows 10 ISO on a USB and install it that way.

Yes that is a great idea. Leave the new M.2 drive in and your SSD out once you're ready to install windows 10 from a CD/Bootable USB Drive.

If you still have an activated windows install on your old boot SSD, you'll have to disable the windows boot manager and disable it as a boot option in the BIOS. You can always download Windows 10 for free...

Assuming you don't have file encryption enabled AND that this is a Windows system, as long as you're an administrator you will be able to access the old files. Note that if you're transferring files from one NTFS formatted drive to another that file permissions will be kept and you'll need to take file ownership away from your old user account.

No, the data capacity would be 2TB as the drives are striped (written to both at the same time with parts of the data), not like raid 1 where it is mirrored on both.
And personally I think you're better off with the sx8200 with the faster speeds.

have 3 NF-F12s on a single header spinning at full speed no problems... I did read somewhere that one fan header can handle about 30W not sure if this is correct.

A good rule of thumb is 3-4 per header to not overload the 1 amp capacity of most headers but it depends on the fan since some use more current than others not to mention the starting current can be more thane double to get things started.

I don't think the Origin EA Access would be connected to the Xbox Live EA Access, even if your accounts were linked. EA probably wouldn't allow that to happen anyways.
