    single 980 most definitely. when you want to go 4K you can buy another and 2 or 3way SLI them. 
    two 970's arn't really going to cut it for 4K i'm afraid!

    Single 980 all day every day. It will preform well and you won't have to deal with SLI.

    You say you bring it to your friends house, is it only the desktop you bring or do you bring all the cables, monitor, mouse etc?
