Also, this maybe my first PC build and as so, please tell me if you think it's simple to build. If you have any recommendations, please tell them to me! I already have the other peripherals.

Dont get a bundled power supply with the case.

best shot, but i think you may need even cheaper (throw the ssd,get windows from G2A)

Drop the cpu, just get an i5 4460 and also drop the aftermarket cooler, and get a better gpu like a 380 or 960 with that saved money

I don't believe Minecraft could really benefit very much from that extra GPU processing power. Also, it seems a little over budget ;(
