How much memory does win 10 take?

It depends on how many games. Windows itself takes around 20-25GB for 64bit. I just got done clean installing Windows 10 Pro and it takes up that much space empty. I would definitely push for 240+ GB though. It gives you way more breathing room with installing other programs. Some games are quite large as well.

I want to get an m.2 ssd but i want it to have my os and some games will 128gb be enough or shall I get an 250gb.

You only need 20gb for the 64 bit version.  On the fast storage people usually put the O/S and their most used games, 128 should be ample.

 

As long as you have ample room for storage(pics, videos, documents, that sort of thing) say a terrabyte HDD (perhaps as drive z/ ).  Perhaps even a system image on it (although if this drive is physically in your machine it shouldn't be your only backup).

We don't call hard drive space "memory", we call it storage. Memory is a word reserved for volatile RAM.

mine takes 30++gb

My Windows folder consumes 16GB.
