Wanting to upgrade ram from 16GB to 32 GB

With how my computer is taking more ram somehow with me opening lots of tabs in both Chrome and Firefox and new games taking in more ram, I think its time for an upgrade. Plus my ram is gonna be 4 years old next year.  https://pcpartpicker.com/part/corsair-memory-cml16gx3m4a1600c9  This is what I'm currently running with in my system ( http://pcpartpicker.com/p/37VMWZ ).

With this I ask what kit should I go with to get my system up to 32 gb, either 2 kits of 16gb or one 32gb kit?  Any company would be nice and I want this to last me for a while since my ram already has gone thru 2 systems builds since 2012.

Also while I'm here quick question, I have Win7 Home Premium which has a limit of ram to 16gb, what OS should I get to make use of this new ram increase?

CPU: 5900X   MOBO: MSI Tomahawk x570
MEM: G.Skill 32gb (2 x 16gb) 3600
GPU: Asus tuf oc 3080

May add the other bits of my system later on

So you think with my UD5H Black Edition I should go with ram speeds at 3000 and over? And which is better 1 kit or 2 kits of ram to put into my system?

I think I may of found the kit that can work with my system for this upgrade.  http://www.newegg.com/Product/Product.aspx?Item=N82E16820231590 Looking at pcpartpicker it showed that with my current system that it would lower the speeds of the ram cause of some weird voltage issue. Is this something to worry about ro not really and just go with it with XMP enabled?

Now I was looking and is it really worth it to upgrade to win 10?
