I have been working to build this since Christmas, and it's not even done.

However, I am close, still have one or two issues to sort out though.

Cable... management?

 eGPU Setup: Macbook Pro 13" 16GB DDR3 RAM, 512GB SSD, i5 3210M, GTX 980 eGPU

New PC: i7-4790k, Corsair H100iGTX, ASrock Fatal1ty Z97 Killer, 24GB Ram, 850 EVO 256GB SSD, 1TB HDD, GTX 1080 Fractal Design R4, EVGA Supernova G2 650W

It's primary focus is gaming, but I'm also looking to get into heavy video and photo editing, that's where the second Xeon and the 16 gigs of ram come in.

The IO layout in server board is different but you can look up the pinning in the manual. They use the same 2.54 mm headers so you are fine.

BTW what type is this GPU?

Mineral oil and 40 kg aluminium heat sinks are a perfect combination: 73 cores and a Titan X, Twenty Thousand Leagues Under the Oil

Theyre Xeons from 2007, not exactly the most powerful things out there anymore.

It's an AMD radeon HD 7870 XT (the Tahiti LE version, with 1536 shaders instead of 1280)
