Because they need that for some specific purpose.

Like Video Editing and rendering stuffs.

Gaming is not the only use for a computer as @Oshino Shinobu said.

Everybody likes to think they will be doing something like video editing and such but most i7 owners rarely do such things. Still if you have the extra money is nice to have the option of doing more.

Here is an extremely accurate and detailed answer. BECAUSE THEY CAN!!!!

“When life gives you lemons, don’t make lemonade. Make life take the lemons back! Get mad! I don’t want your damn lemons, what the hell am I supposed to do with these? Demand to see life’s manager! Make life rue the day it thought it could give Cave Johnson lemons! Do you know who I am? I’m the man who’s gonna burn your house down! With the lemons! I’m gonna get my engineers to invent a combustible lemon that burns your house down!”

- Cave Johnson, founder and CEO of Aperture Science, in Portal 2

For gaming, Consider an i5 44460/4440/4690K(if you're into overclocking).

Best CPU for gaming.

"i3" is too wide of a range.

What i3 specifically? What GPU? What games?

From a gaming perspective, it highly depends on the games you play.

An i5 will give you better performance then an i3 in multithreaded  games,

that are optimized to used 4 threads.

No, you will get mediocre performance or in some games run like SHIT!!

If you can afford an i5, get an i5.

I would personally go for an APU and get a R7 GPU and crossfire it instead of an i3.

i3 does not beat or tie a i7 in gaming. Also i7 will beat an i5 of the same generation due to it's high clock speed.
