Is there a way to change the shipping service/speed on an eBay listing after you sell an item?

As some of you may know I run a shoe businesses on eBay. Someone just asked me if I could give them overnight shipping if they win an auction and they will pay for it. The problem is how do I charge them the extra money to get overnight shipping since I can't change the shipping speed since I already have bids?
