if your just putting an iso on there it shouldent matter if your only using it to install an os then it wouldent matter

Keep in mind that flash drives use much lower quality NAND than SSDs.  If you install Ubuntu on there as an OS, you'll be writing to it a lot and wearing it out really quickly. 

If you use it as an installer disk with persistent storage, all changes will be stored in the RAM until you power down the machine, at which point they get written to the persistent file. 

 

Also, if you do a full install to the USB stick, it'll be less compatible with other hardware because the OS sets itself up for the machine you're running during the installation.
