Why Mechanical Keyboards?

The general consensus is that mechanical keyboards are better in all regards, especially for gaming. Why is that? I enjoy using a membrane keyboard over a mechanical one, but what's the deal? What are the benefits? What's the reason for mechanical keyboards always being the preferred option for apparently everyone except me?

It's whatever you enjoy typing on. Enjoy membranes? Cool. Use them.

A rubberdome keyboard feels squishy to me, like I'm trying to type on jello. When I'm trying on a mechanical, it feels much more satisfying and more of a "complete" action.

They feel better to type on, most can type faster on them, and they sound sexy. (Blues and Browns anyway)

Because they feel nicer to a lot of people. If you prefer membrane then that is great for you since membrane keyboards are always cheaper.

The actuation point is higher and because you don't need to bottom them out they're more ergonomic (if you can break the habit ;)), theoretically they're longer lasting too but TBH I've never had a rubber dome wear out so that's just a number on a bit of paper to me, the fact you can customise them a lot more is nice too (as a tweaker that's what I like most about them).

There's nothing wrong with rubber domes though, personally I like the pop of a quality rubber dome which is why some people like things like buckling springs or topres etc.

Well coming from a poo quality membrane keyboard to a really high quality membrane keyboard, I have found typing and gaming to be less painful on my fingers (my old keyboard required a weird angle + weird force) and far more gratifying. So I can only assume a mech would feel like heaven.

Nicer, more often good aftermarket key caps, longer lifetime, good back lighting options like k70.

It's just a better typing experience and it's more comfortable. They don't make your hand hurt after typing for a long time like a membrane, they are also last much longer. Most of them have n key rollover which mean you can type as fast as possible. But for me the reason i use them is because of the tactile feel of them( For brown and blue switch).
