Additional monitors don't put any load on the GPU unless you're spanning games across them, so I would just put both monitors on the graphics card and not worry about it, if I were you.

So I don't have a very powerful system (GPU wise anyways) and I do all of my gaming on a single monitor. I'm just trying to figure out if I can hand off my smaller non-gaming monitor to my onboard Intel graphics just to free up some processing power. Last time I just plugged in the monitor to the MoBo with the other one on the GPU it sent no signal...

As @Glenwing has said, the 2nd monitor has no major effect on power required to drive it, unless you are trying to game on it, which you won't be doing. If you have the option, always plug your monitor into your GPU
